Ingredients
- 1 can (28 Ounce) Whole Tomatoes With Juice
- 2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
- ¼ cups Chopped Onion
- 1 clove Garlic, Minced
- 1 whole Jalapeno, Quartered And Sliced Thin
- ¼ teaspoons Sugar
- ¼ teaspoons Salt
- ¼ teaspoons Ground Cumin
- ½ cups Cilantro (more To Taste!)
- ½ whole Lime Juice
Preparation Instructions
Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

YUM! We got a VitaMix for Christmas and were watching the recipe DVD last night. The tomatillo salsa looked delish, too. I'll try it out and let you know if we like it.

Oh yum. You're making my mouth water. I just ordered the Mexican pack from BB and I'll be making this for sure.
Pass on the canned tomatoes. You can't make a salsa without fresh.
never say never until you've tasted. I make my kids try at least one bite before they claim they don't like....
and that's coming from a girl who grew up on home grown tomatoes.
I've printed it, and we'll give it a try this weekend when Stan is home. I've been looking for a good salsa, not pico de gallo as Stan has that mastered :). I will try my home canned tomatoes, minus most of the juice and see how it turns out. Gracias! Hope your sinuses are free at last!
